Instant Pot Fiesta Chicken          

1 cup white long grain rice 

4 chicken breasts or thighs  

1 packet Hidden Valley Fiesta seasoning dip 

1 can pinto beans, or black beans, rinsed and drained 

1 can Rotel (not drained) 

1 can Fire Roasted Tomatoes (not drained) 

1 can corn (not drained) 

2 cups chicken broth or water

½ block cream cheese, divided into tablespoons 

Toppings 

Shredded Mexican cheese 

Tortilla strips 

Chopped Scallions 

Sliced avocado 

Sliced lime 

Directions 

Sprinkle seasoning on chicken 

Layer everything except cream cheese into inner pot 

Set to high pressure for 20 min 

When cooking stops, quick release pressure 

Take chicken out and shred it, then return to pot 

Add cream cheese and stir to melt and combine 

Add desired toppings to each serving
