Easy, Delicious Salmon Bowls

Fresh Salmon fillets (2)

              Carefully remove the skin off the salmon with a pairing knife and cut into 1” cubes

Marinade for salmon:

1 Tbsp garlic (fresh or powder)

1 tsp chili flakes (optional)

1 tsp paprika

1 Tbs soy sauce

¼ cup raw, organic honey

1 inch piece of peeled fresh ginger

½ fresh squeezed lemon juice

Blend (using a mini food processor or blender) and pour into metal or glass bowl

Marinate salmon in the sauce for 15 minutes

 

Cook 1 cup brown or jasmine rice according to package directions. When finished, leave lid on to keep warm while you cook the salmon.

Heat a non-stick pan with 1 tsp cooking oil on medium heat and cook salmon for 3 minutes each side till golden

Prepare Cucumber Salad and remaining ingredients

Cucumber Salad:

1 cucumber (peeled and cut into slices)

1 Tbsp soy sauce

½ tsp garlic powder

½ tsp chili flakes (optional) or paprika

1 tsp rice vinegar

½ Fresh squeezed lemon juice

1 cup cooked brown or jasmine rice

 

Build your bowl (below are options)

3 shredded carrots

2 cups shredded cabbage (green or red)

1 cup shelled edamame

½ cup sliced red onion or 3 sliced green onions

1 sliced ripe avocado

Chopped cilantro

Sesame seeds

 

Garnish with Yum Yum Sauce or Sriracha to preference
